AND I CAN’T GET UP!
Fall has definitely arrived at our house, and I can’t seem to stop. I’m afraid I may not get all of the Fall décor put away in time for Christmas!
Some of you may remember that, since I am a wannabe crafter with two left hands, I purchased somebody else’s home-made placemats at an estate sale a couple of years ago.
This is the underside of the placemat. I really think that even I could have crafted these, but it sure was easier just to buy somebody else’s craftiness!
Salad plates (Estate sale): Hand painted; Dinner Plates (Church Rummage Sale): Ridgways, England, Apple Blossom; Chargers: Wal Mart; Napkins: Pier One Sale long ago; Stemware: Wedding gift. That’s all I remember.
I had some requests for recipes when I recently posted our snack dinner. Since I’m always eager to please anyone who takes the time to read my blog, I am sharing these simple recipes on this post.
Arkansas Caviar (probably also referred to by the name of the state where you reside):
4 TO 5 STALKS OF CELERY, CHOPPED
2 CANS BLK EYED PEAS, DRAINED
2 CANS MILD ROTEL, DRAINED
1 MED SIZE BAG FROZEN CORN, THAWED
1 CHOPPED ONION
1 CHOPPED BELL PEPPER
1 CUP CHOPPED CARROTS
1 PKG BUTTERMILK RANCH POWDER
1/2 TO 3/4 BOTTLE ROBUSTO ITALIAN DRESSING
MIX TOGETHER AND DIP WITH TOSTITO CHIPS
My Note: This makes a HUGE amount. Unless I’m having a big party, I half the recipe. I also use regular Ranch Dressing Mix, because I have a hard time finding the buttermilk ranch. I think the Robusto Italian Dressing is important. I’ve been told it isn’t as good with regular Italian dressing.

Baked Pimento Cheese
1 1/2 Cup Mayo
4 ounce jar diced drained pimentos
1 teaspoon Worcestershire
1 tsp finely grated onion
1/4 teaspoon red pepper
8 oz block of extra sharp cheese, grated*
8 oz block of sharp cheese, grated*
Mix together, spoon into greased 1 1/2 quart baking dish.
Bake 20-30 minutes at 300 degrees
My Notes: I really cheat on this recipe, but we like it anyway. I use the already grated sharp cheddar cheese.*
We like to dip this with those Baked Ritz Chips.
